One bag of dried mixed beans. I only used half this time.
A can of diced tomatoes. Substitute with fresh cut tomatoes.
Salt & pepper to taste
Rinse off the dried beans. Leave them over night in a bowl submerged in water.
The next day, drain out the water and place the beans in the crock-pot.
Add the can of diced tomatoes or fresh.
Add desired amount of water. You want the beans to be covered.
Chop two leaves of kale. Add it to the pot.
Sprinkle in the Italian seasoning, salt & pepper.
Cook on low for 6 hours.
Makes an easy, hardy, and nutritious meal.
